Dayspring Dairy is a family owned and operated farm. They are the first licensed sheep dairy and producer of sheep milk cheeses in Alabama. All of their cheeses are made from milk from their flock of 100 dairy sheep, which are shepherded by Greg Kelly. Many of their sheep have names and are affectionately called their "girls” and they are at the heart of our farmstead cheesemaking operation. Ana Kelly is the head cheesemaker and culinary mastermind. Their children also enjoy contributing to the farm and will be an integral part of the business as they grow and mature.
In 2011, the Kellys purchased a beautiful farm in Gallant, nestled in a valley in the piedmont of north-east Alabama with lush rolling pastures. After months of research, including visiting several sheep dairies across the country, construction on our dairy and creamery began in 2012 with a focus on sustainability and agritourism.
They produce unique, delicious, safe, and healthy cheeses that start with the highest quality milk. Their sheep graze on lush native pastures year round producing milk with unique flavor profiles. They never use pesticides or commercial fertilizer on their pastures. Likewise, their sheep are never given hormones. All of these factors help produce cheeses that are one-of-a kind.
Why Dayspring? Dayspring means sunrise and is a biblical reference to Jesus. They know God led them to do this endeavor which is why they have named it Dayspring Dairy, to give Him the honor and glory.
