Roasted Honey Brown Sugar Glazed Carrots

Everyone will ask "how did you make this?" when these carrots are served- they will never know how simple this recipe is!

We LOVE sweet carrots in our house, but oftentimes they end up sad and droopy after sitting in our fridge for weeks because we weren't sure how to make them…until now. 

Who wouldn't love dessert for dinner? These sweet roasted carrots are a total disguise and transform into “dinner form” solely for being a vegetable. A slow roast in the oven brings out all natural sugars from the carrots prior to being glazed in a beautiful brown sugar honey reduction that keeps the sweet trend rolling. 

But, this is for dinner after all. So, we add a dash of heat to the sweet with a sprinkle of cayenne pepper to complete the side. 

This sweet side dish pairs extremely well with both chicken and pork and shouldn't take much time at all! 

Ingredients:
2 bundles organic carrots
1/2 stick butter
1/3 cup brown sugar
3 tablespoons honey
1 pinch cayenne pepper
Directions:

Preheat oven to 375.

Slice carrots in half lengthways; toss with olive oil, s&p. Place on sheet pan in a single layer. Bake for 15-20 minutes. Carrots should be tender, but not quite fully cooked.

After carrots are complete, melt butter in skillet. When foamy and starting to brown, add roasted carrots & salt.

Cook for 5 minutes on medium-high. Reduce to medium low and sprinkle in brown sugar and honey. Continue to cook for another 5-7 minutes. Raise heat to medium high for 30s-1m to thicken the glaze.

Season with cayenne and black pepper. Plate and serve.
