Monster Cookies

What should one do with leftover Halloween candy? Make cookies! These are delectable year round with their chocolate and peanut butter pull, but also serve as the perfect way to use up any extra candy you don't want lying around the house.

If you love a gooey cookie- you won't regret making these! Be sure to let them fully cool because they'll continue cooking while they're out of the oven.

Ingredients:
1 cup sugar
1 cup packed light brown sugar
1 stick unsalted butter, at room temperature
3 large eggs
1 1/2 cup peanut butter
1 tbsp vanilla extract
2 tsp baking soda
4 1/2 cups rolled oats
1 cup M&Ms or candy of choice
1 cup chocolate chips
Directions:

Preheat the oven to 350℉ and line two baking sheets with parchment paper.

In the bowl of a stand mixer fitted with a paddle attachment, cream together the sugar, brown sugar and butter until light and fluffy (about 3 min).

Beat in the eggs, one at a time, and then beat in the peanut butter, vanilla, baking soda and salt until well combined, scraping at the sides as needed.

Add the the oats and mix until just combined, then add the M&Ms and chocolate chips.

Use a cookie or ice cream scoop to make about a 2tbsp mound. Be sure to spread out the mounds about 2 inches apart.
6.
Bake the cookies for 12-15 minutes then remove them from the oven and allow them to cool for 5-10 minutes on the baking sheet before transferring them to a rack to cool completely.
