Organic Pepper Medley Sofrito with Gulf Caught Fish
Sofrito is the foundation of Puerto Rican cuisine and the base for many of the island's most popular dishes. Consider a sofrito the “mirepoix” of Caribbean island cooking. It consists of an all-purpose blend of diced onions, peppers (here we're using sweet peppers, aji dulce peppers - a local island variety full of aromatics) &, for a touch of heat 1 serrano pepper, and cilantro.
In this kit, we're pairing this traditional sofrito with gulf caught fish (Amberjack or Wahoo) & recommend blackening with cumin, cayenne pepper, ancho chili powder & chili powder (+ salt and pepper); or, simply season the fish to your liking!
Traditionally, you would learn to make this with a recipe passed down from abuela (your grandma). The word sofrito in Spanish means to saute something, and that's exactly what you'll do. Simply sweat it all down until the onions are translucent then you're ready!
We've plated the fish atop cannelleni beans, but you could use black beans or cilantro rice. Simply top with the sofrito and you're ready to tango.
