Fresca means "fresh" in Italian which seemed the perfect name for our fresh cheeses. A creamy, soft and mildly tangy spreadable fresh cheese also known as Brebis. The flavor, freshness, and richness of our milk comes through to produce a milder and less pungent soft cheese when compared to goat cheese or chèvre.
